It’s not easy eating healthy.
It’s even harder trying to make healthy food fast, gorgeous, low-cost AND planet-friendly. But it sure is fun trying! Why not stay in touch by joining our Facebook group?

I live in the fair city of Brighton with my husband and our cat. I work at White Label SEO by day and spend my spare time as a singer/songwriter. I’m in the bands Gordon’s Alive, GNOSIS and am also known as Elamental. I do also have a penchant for parties and am easily persuaded to indulge in cider (local and organic of course) at one of the many fine local drinking establishments Brighton has to offer, then recuperating at the Brighton massage clinic, Every Body Therapy

I love food too much to starve myself.
Over the years I’ve lost over 2 stone by changing my eating habits and learning about nutrition. I am not a vegetarian but find the best way to eat healthy low-cost meals that don’t cost the earth is to eat vegetarian or vegan most days. It’s also a great way to get your five a day and all the essential vitamins and minerals your body needs.

In an attempt to learn more about food and where it comes from, I’ve decided the time to do something different is now. So together with my other half and a friend, we are now the proud renters of an allotment – that way, we can ensure our vegetables and herbs are organic, GM free and FREE!

Now I’m also making a real effort to cook as much food from scratch as possible. It’s cheaper; uses less or zero packaging and I know exactly what goes in to it. The only problem with cooking food from scratch is that it can take a lot of time and effort. You need a good supply of new recipes to keep things interesting… and seasonal. Plus a few tricks up your sleeve to make everyday healthy eating easy.

My plan.
Sharing the dinners I conjure up with you, together with my healthy meal plans might hopefully make living a healthier, lower-impact lifestyle a bit easier. Who knows what the collective benefits are of this, but surely lots of positive things make one mother of a good thing? Let’s find out.

Each recipe will feature it’s own at-a-glance profile which will include the usual servings, timings, calories, plus my own Foodwitch terms as follows:

One-Off Wonder = Really quick and easy to make. Make it. Eat it. Yum.

Lazy Leftovers = Make 2 or more meals at once. Eat one. Eat the others another day. Just reheat or enjoy cold for a no-cook lunch or dinner.

Easy Freezy Ready Meal = Suitable for freezing. Defrost beforehand. Just reheat for a no-cook lunch or dinner.

Doubler = Can be served in 2 or more ways. Great for making lazy leftovers as delectable as the original (if not more).
